How to cook in an earthenware tajine
Before using a new earthenware tajine for the first time, soak it in water for a few hours and let it dry thoroughly. Then place it on low heat and let it warm up slowly; on gas or an electric stovetop, it is best to use a heat diffuser. Avoid large temperature differences, such as a hot tajine on a cold countertop or cold water in a hot dish. First, put onions and oil on the bottom, then meat or fish with vegetables, and let everything cook gently with the lid on.
